Most people know dandelions in the United States as a nuisance, a weed to be rooted out of their perfectly manicured lawns. My husband being one of those, which leaves me with the task of harvesting as many of the dandelions as possible before he mows them down in order to bake and freeze as many dandelion muffins before they are all gone for the season.
Dandelions play such an important role in our soil development as well as being rich in antioxidants, make them a splendid addition to muffins.
Dandelions generally indicate poor soil that is low in calcium, as well as compacted. The dandelions’ taproots, however, are doing the job of breaking up the soil. I like to think of them as natural rototillers here on our homestead.
This simple dandelion muffin recipe takes minimal time to whip up, and is a subtly sweet breakfast snack favored by my family. Smothered with chocolate sunflower butter, you are in for a low sugar treat!

Dandelions list of health benefits includes many more than listed above, I’m not a doctor, just a lover of natural remedies, and foraging recipes, be sure to do your own research. I would advise against harvesting dandelions from anywhere. Many people use pesticides on their lawns, fields, etc, so be sure before you forage that you have chosen pesticide free dandelions.
We do not use any pesticides on our property, hence why I’ll be weeding until I’m dead, but I know my dandelions are free and clear of any man made poisons.
I found my recipe from homespunseasonalliving.com with simple ingredients and directions.
I added 2 tablespoons of my vanilla extract to the recipe for a slightly sweeter addition, and topped ours with chocolate sunflower butter from Trader Joes.
I prefer to cook all my muffins in my cast iron muffin pan for a soft center, and crispy outside.

I’ve never thought to make muffins with dandelions. I’ve used the root in tea before. Neat!

How do you harvest the root to make tea? I buy dandelion root tea but never occurred to me to make it!

You can dig them up fall-spring when they’re dormant and then dry them in a dehydrator or in the oven. Make sure you get the tap root obviously. Then just use in tea as you would any other root.
